'Da Box' Cooking Guide

Please note that while every effort is made to ensure you can recreate the Da Mario experience at home, it may not be quite the same!

Fresh Pastas

  1. Fill pot with 2L of water for every portion of pasta
  2. Bring water to boil and add 10g of salt per litre
  3. Remove pasta from bag and separate or unravel it
  4. Drop pasta into boiling water
  5. Cook for approx. 6 mins till ‘al dente’
  6. Remove pasta and drain saving some of the cooking water for cooking the sauce

Ragu Sauce

The below instructions apply to one 550g packet of sauce.

  1. Melt approx. 50g of butter in a saucepan till golden
  2. Add a generous pinch of rosemary to the melted butter
  3. Add the contents of the ragu sauce bag and 1 ladle of the drained pasta water
  4. At this point it is normal for the sauce to have a runny consistency
  5. As an option you can add a ladle of tomato sauce
  6. Add the strained pasta and a splash of olive oil into the sauce
  7. Allow the pasta and sauce to reduce on high heat for approx. 60 seconds until sauce returns to original consistency
  8. Toss 1 tablespoon of grated parmesan per portion of pasta and mix through
  9. Plate and enjoy!

Pomodoro Sauce 

The below instructions apply to one 550g packet of sauce.

  1. Add chilli garlic to saucepan and heat till golden
  2. Adding cherry tomato and basil is optional at this stage
  3. Add the contents of the pomodoro sauce bag and 1 ladle of the drained pasta water
  4. At this point it is normal for the sauce to have a runny consistency
  5. Add the strained pasta and a splash of olive oil into the sauce
  6. Allow pasta and sauce to reduce on high heat for approx. 60 seconds until sauce returns to its original consistency
  7. Plate and enjoy!

Pizzas

Our pizza bases are supplied frozen and for best results should be kept that way until you are ready to top and cook them.

  1. Preheat your oven to its max temperature (at least 220 degrees, ideally no fan/grill mode)
  2. Remove frozen base from plastic bag
  3. Place the frozen base onto the oven tray you intend to reheat it on (we suggest a sheet of baking paper between the tray and the pizza base if possible)
  4. Spread the tomato sauce from the round container on the frozen base (approx. 70g per pizza)
  5. Add 2 basil leaves to the base then spread the mozzarella (approx. 60g per pizza) over the sauce and basil evenly
  6. Add a drizzle of olive oil to finish
  7. As an option you can add toppings of your choosing at this stage
  8. Place pizza tray in the oven for approx. 5-8 mins (depending on your oven temp)
  9. Remove pizza and check the crust is soft and hot, if not allow to cook a little longer
  10. Plate and enjoy!
